A very tasty and easy kofta ball recipe without onion and garlic
We are almost half way through the vegan chef training for 2021. So far it has been incredible. Last week we finished module 3 – Ayurvedic Cuisine. For those who don’t know; Ayurvedic cooking is a practice that is thousands of years old and originated in India. It looks at what foods you can and can’t eat for your particular constitutional type (dosha) and any imbalances you may have in your body. Food is the first step to balancing your body and health. We spend three days on this way of cooking so participants get a good handle on it and learn to cook exceptionally delicious food with the limited ingredients available to them.
In the last cooking session of the three days each person was given a dosha and they had to make a dish that matched any cuisine, they were also given 200g cooked adzuki beans (adzuki beans are great for all three doshas) and had to include them in their dish. All three dishes were incredibly delicious, so delicious that I will be sharing the recipes with you over the next three weeks. You can cook the dishes as you are or add the options if you like.
I personally can’t wait to try all three dishes again. This is the first one created by Hayley who was given the pita dosha. Hayley did an exceptional job to get this dish so tasty without being able to use garlic or onion. She used Vegan Richa’s Indian cookbook for inspiration.

Kofta Balls in Pepita Sauce
Serves 4
Ingredients
Kofta Balls
240g adzuki beans cooked
1 tsp cumin seeds
½ cup pepitas coarsely ground
1 tsp salt
6 tsp Hayley’s spice mix
1 tsp Hing (asafoetida)
2 medium potatoes cooked and mashed
4 tbsp besan flour
2 tbsp lemon
2 tsp oil
Sauce
4tsp oil for frying
4tsp spice mix
1 tsp hing(asafoetida)
2 tsp salt
¾ cup pepitas
3 cups almond milk
2 tbsp lemon
Hayley’s Spice mix
2tsp cumin seeds
2 tsp coriander seeds
½ tsp cardamom pods
½ tsp cinnamon
1 tsp fennel seeds
1tsp turmeric powder
¼ tsp salt
¼ tsp pepper
Coriander for garnish
Method
- Preheat oven to 200°C.
- Boil the potatoes and mash.
- Make the spice mix by dry frying all the spices for two minutes then leaving them to cool down. Once cool grind them in a spice grinder.
- Dry fry the cumin seeds and leave whole.
- In a bowl, mash the beans and ground pepitas. Add the cumin seeds, salt, hing and spice mix and mix well. Add the mashed potato, besan flour, lemon and oil and use hands to mash and mix.
- Taking 2-3 tbsp of mixture, make oval balls and place on a sheet of baking paper on a tray. Should make 6 balls. Brush oil on the balls and bake for 20-25 minutes.
- To make the sauce place the pepitas in a blender with almond milk, lemon and salt.
- Heat oil in a pan and add spices, frying for 2 to 3 minutes. Add the sauce mixture and stir until it begins to thicken which will take approximately 4 minutes.
- Add kofta balls to sauce and serve hot with coriander as garnish.
